docs: Update intersphinx_mapping

Running `make dirhtml` in bindings/python/docs generates the following
error:

sphinx-build -b dirhtml -d build/doctrees   source build/dirhtml

```

This commit updates intersphinx_mapping to follow the latest docs [1]
